White Chocolate Raspberry Vegan Tarts

White Chocolate Raspberry Vegan Tarts

INGREDIENTS (*Choose organic where possible)

CRUST
> 2 cups Almond meal
> ¼ cup Coconut Oil

FILLING
> 1 cup Cashews (soaked for 6 hours & rinsed)
> 1 cup Macadamias (soaked for 6 hours & rinsed)
> ½ Cacao Butter (melted)
> 2 cups Raspberries (fresh or defrosted)
> 1 tsp Vanilla Bean

Optional
> ¼ cup Rice Malt Syrup

METHOD

Crust

1. Add almond meal and coconut oil to food processer, until well combined.

2. Press mixture into a tart pan (8-inch) or muffin tin. Noting this mixture will stick to the bottom if placed into muffin tin, place paper holders to remove easily.

3. Refrigerate for 30 mins, or until firm to touch.

Filing

1. Add cashews and macadamias to food processor, pulse to break down nuts.

2. Add melted cacao, vanilla bean (rice malt syrup if using) mix until well combined.

3. Add raspberries and continuing blending.

4. Pour mixture into pan and refrigerate for approx. 3hours.

5. Enjoy this amazing sugar free treat!
