Spicy Sunflower Seed Veggie Burgers

Spicy Sunflower Seed Veggie Burgers

Makes about 6 burgers.

YOU WILL NEED:

  • 1 cup cooked quinoa
  • 1 cup sunflower seeds, toasted
  • 1 cup chickpeas, rinsed thoroughly and mashed
  • 1 cup grated carrot
  • 1 large handful parsley, finely chopped
  • 1/2 cup almond meal
  • 1/4 cup currants/sultanas
  • 1/8 cup chia seeds
  • 2 garlic cloves, crushed
  • 1 egg, whisked (easily omitted for chia egg if vegan)
  • 1 tsp sea salt
  • 1 tsp chilli powder
  • Cracked black pepper
  • 1 tbs coconut oil, for frying

METHOD

1. Preheat oven to 160 degrees. Spread your sunflower seeds onto baking tray. Cook them in the oven for 10 minutes or until slightly golden. Pop aside to cool.
2. Place all ingredients (except oil) into a large mixing bowl and combine. Use your hands and get right in there. Divide the mixture into 6 balls and flatten into patties using the palm of your hand.
3. Place a large frying pan over medium heat, Melt coconut oil and cook the patties for 6 mins or so. Flip and cook for another 6 mins on reverse side, or until golden. Remove from heat.
4. Serve burgers sandwiched between our Gluten Free Burger Buns, adorned with beetroot relish (you'll find a sugar free version in my ebook 'A Nourishing Morning') and a side of sweet potato fries. The sweetness of the beetroot relish really brings out the flavour of the currants in the burgers.
