Quick Quinoa Mint & Cranberry Salad

Quick Quinoa Mint & Cranberry Salad

WHAT YOU NEED

    • 1 cup quinoa
    • 2 cups filtered water
    • 1 handful of dried cranberries
    • Large handful fresh mint leaves
    • Large handful of fresh parsley
    • Juice of 1 lemon
    • 1/2 tsp sea salt
    • 2 tablespoons olive oil
    • 2 handfuls roasted almonds

WHAT TO DO

1. Wash Quinoa in clean water and strain. Add to a sauce pan with 2 cups of water and bring to the boil and back down to a simmer. Cook for 10 minutes or until water is absorbed. Stir, transfer to a large bowl and leave to cool.
2. Chop mint and parsley finely. Add to quinoa.
3. Roughly chop almonds and add to quinoa.
4. Add cranberries, lemon, salt and pepper, olive oil and stir well
Serve and enjoy!
