Pomegranate, Pistachio & Pearl Couscous Salad

Pomegranate, Pistachio & Pearl Couscous Salad

INGREDIENTS

> 100g rocket/arugula leaves
> 1/2 cup walnut halves
> 1/3 cup pistachios, chopped
> 1/3 cup mint, torn roughly
> 60g feta cheese, crumbled
> 3/4 cup pearl cous cous
> 1 pomegranate
> 2 cups vegetable stock
> 1 tbs sumac (optional)
> 1 tbs dukkah
> 3 tbs olive oil
> 1 lemon, juiced
> Pinch of salt

METHOD

1. Place cous cous in a saucepan with stock on medium heat, cover and simmer until tender.
2. Drain (if excess liquid) through a strainer and rinse cous cous under cold water, set aside to cool.
3. Remove all the jewels from the pomegranate and place into a bowl.
4. Add everything else to the bowl then top with cous cous, mix and serve.
