Holy Santa Claus – these are next level!! I couldn’t think of what to name them and a beautiful friend, aka taste tester, said they taste exactly like NEAPOLITAN ICE CREAM!

Do you remember as a kid you would eat it? Well to be honest I would really only ate the chocolate and strawberry if I HAD TO, but then the vanilla - no thanks, haha.

So these little babies are now named NEAPOLITAN PHAT BOMBS! Because they are the good kind of PHAT (Pretty Hot And Tempting!), super nutritious and will keep you full and curb those pesky sugar cravings.

I seriously love bliss balls, they would be my second favourite to smoothies, because you can create ANY flavour combo and jam pack them full of nourishing foods.

PLUS they take next to no time to make, awesome in the fridge and can be frozen so they are like the holy grail!

INGREDIENTS

> 1 ½ cups Strawberries
> 1 cup Macadamias/Cashews (I like this mix!) soaked and rinsed.
> ½ cup Hazelnut Butter
> ¼ cup Coconut Flour
> 2 tbs Coconut Oil
> 1 tsp Vanilla Bean Extract

COATING

> ½ cup Coconut Oil
> ¼ cup Cacao Powder
> 2 tbs Rice Malt Syrup
> Desiccated Coconut for sprinkling

METHOD

1. Add all ingredients to your blender/food processor until smooth.

2. Roll into Tablespoon size balls.

3. Place in fridge for 30 minutes.

4. Meanwhile, Over a low heat on the stove, in a small saucepan add coconut oil, cacao powder and rice malt syrup. Gently mix until smooth.

5. Set aside for a couple of minutes until cooler (but not set).

6. Drizzle over the top of your balls and BOOM  NEAPOLITAN PHAT BOMBS!

They are seriously epic!
