Green Eggs at Tall Timber
Having your greens at any time is great, but we think having them for breakfast is the greatest!
Tall Timber have delivered a meal that definitely keeps up with the best of them in the 'green eggs' stakes. Above, you're looking at sauteed kale, asparagus, green beans with poached eggs, almonds and goats curd on quinoa loaf.
Lesh Karan of The Mindful Foodie gives this vegetarian brekkie dish her tick of approval as she often finds it hard to find a good breakfast dish with enough green stuff.
"I love that this dish is piled high with greens. This is usually rare, and I tend to order a side of greens if my breakfast doesn't come with them. Kale, while also being a green leaf veg, is also a brassica and is abundant in calcium, iron, chlorophyll, antioxidants, sulphur, vitamins A, K and C, indoles, fibre.
Vitamins A& K are fat soluble vitamins, so it’s best to eat kale with some fat — like served with eggs and goats curd here, and being sautéed in good quality fats, such as coconut oil — so the vitamins can be absorbed.
The goats curd adds extra protein and calcium to the dish. Goat’s milk protein is much easier to digest than cow’s, so some people may find that they tolerate it better."
