Ginger Date Bites

Ginger Date Bites

Makes 10-12 bites

WHAT YOU NEED

  • 12 dates, pitted
  • 1 1/2 cups cashews
  • 1/4 cup sesame seeds
  • 1 tbs rice malt syrup
  • 1 tsp freshly grated ginger
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 1/4 tsp nutmeg
  • pinch sea salt

 

WHAT TO DO

1. Process cashews and dates in food processor/blender, until crumbly.
2. Add dates, spices, salt and rice malt syrup and process until mixture comes together to form a ball.
3. Pour sesame seeds into small bowl. Take heaped teaspoons of the mixture and roll into perfect balls.
4. Roll each in sesame seeds and then transfer to a plate. Allow bites to set in the freezer for 20 minutes. Serve cold.
