Crunchy Gluten Free Granola

You'll want to eat this granola any time of the day. Claire Wheeler from The Running Pantry, and who you'll also find smiling and ready to greet you at Xtend Barre Melbourne, served this granola at Xtend Barre's latest event and once we tried it, we had to share it with you.

It's gluten free, Paleo friendly and can be fructose friendly if you remove the dried fruit and just serve with your choice of fresh fruit. (Rice malt syrup is fructose friendly).

YOU'LL NEED

  • 3 x cups of coconut flakes
  • 1 x cups of mixed raw nuts chopped
  • 1 cup of mixed dried fruit
  • 1/4 x cup of sunflower seeds
  • 1/4 x cup of amaranth
  • 1 x tablespoon of cinnamon
  • 1/4 x cup of pepitas
  • 1/4 x cup chia seeds
  • 1/2 x cup of rice malt syrup
  • 1/2 x cup of coconut oil, melted

WHAT TO DO

1. Preheat oven 180C/350F/5GAS.
2. Add coconut flakes, chopped nuts, dried fruit, sunflower seeds, amaranth, cinnamon and half of the pepitas and chia seeds into a bowl.
3. Mix in the rice malt syrup and coconut oil. Mix well then spread on baking tray covered with baking paper.
4. Sprinkle the remaining cinnamon, pepitas, chia seeds and a little drizzle of rice malt syrup over the top.
5. Bake for 15-20 mins or until golden brown!

Perfect served with your choice of yoghurt, nut milk, fresh fruit, or, just eaten on the go for a nutritious snack full of good fats.
