Creamy Mushroom Soup

Creamy Mushroom Soup

WHAT YOU NEED

+ 1kgs of mixed organic mushrooms (shitake, swisse, button, brown, oyster)
+ 1 large brown onion sliced
+ 4-6 small garlic cloves
+ Olive oil to drizzle
+ 1 Tablespoon of coconut oil
+ 1 teaspoon of dried thyme
+ 1 teaspoon of dried oregano
+ 500ml of beef (or chicken or vegetable) broth
+ 400ml of coconut milk
+ Salt and pepper to season
+ Roasted hazelnuts (optional) and fresh parsley to serve

WHAT TO DO

1. Preheat oven to 200 Degrees.

2. Place all mushrooms in a lined baking tray and drizzle with olive oil, salt and pepper and herbs.  Add sliced onion and peeled garlic to tray.

3. Bake for 20 minutes.

4. In a saucepan on the stove, heat 1 tablespoon of olive oil and then add roasted mushroom mix to pan.

5. Fry for 5 minutes with all the juices from the roasted mushrooms.

6. Add bone broth and coconut milk, stir and then simmer for 20 minutes.

7. Blend well with a stick blender until smooth and creamy.  (This will create a delicious thick soup!)

8. Serve with chopped hazelnuts and fresh parsley on top. Enjoy!
