Chocolate Christmas Panforte

Chocolate Christmas Panforte

Makes one 20cm cake (about 5 cm high)

INGREDIENTS

> 2 cups almond meal
> 1/3 cup raw cacao powder
> 1/3 cup melted coconut oil
> 3 tbsp maple syrup
> pinch of sea salt
> 10 sulphur free dried apricots, roughly chopped
> 1/3 cup goji berries
> 1/2 cup slivered almonds

METHOD

Mix all ingredients together and place into a cake tin lined with cling-wrap or lined in baking paper. Freeze for 1 hour and then remove from the mould and allow to ‘un-freeze’ (is that even a word?) slightly before slicing.

If you want to gift this you can wrap it in baking paper and tie with a pretty red ribbon before handing it over to the lucky person. Make sure they keep it in the fridge if you’re in the Southern Hemisphere because the Aussie summer will make for a very melted panforte-maggedon.
