Overnight soaked chia seeds with cinnamon ginger spiced apples

This is definitely a chia seed pudding recipe that will make you smile in the morning - or any time of the day.

WHAT YOU NEED

Creamy chia

    • 3 tablespoons chia seeds
    • ½ teaspoon ground cinnamon
    • 1 teaspoon vanilla extract
    • 3 cups organic cashew milk (may use any milk of your choice)

Spiced apples

      • 1 apple cored and sliced
      • 1-2 teaspoons rice malt syrup
      • ½ teaspoon ground ginger
      • ½ teaspoon ground cinnamon
      • 2 teaspoons filtered water

PUTTING IT TOGETHER

1. For the creamy chia, combine the chia seeds, cinnamon, vanilla and 2 cups of cashew milk in a bowl; cover and set aside for half an hour to overnight in the fridge.
2. Pour the mixture into a small saucepan, adding about 1 cup of extra cashew milk and stir gently over low heat; adding more milk if you prefer a lighter consistency.
3. While the chia mixture is simmering, place the apples, rice malt syrup, ginger, cinnamon and water in a small saucepan and simmer on low to medium heat for about 4-5 minutes to let the spices soak through.
4. Serve the warmed creamy chia in a bowl topped with the spiced apples, cacao nibs and dessicated coconut.

Additional notes:
This can be enjoyed warm or cool. If preferred to enjoy cool - in step two, just add the extra cashew milk and stir til smoothly combined, without heating it up.
